The one they planted.

We went to Colombia for the new harvest and a family reunion with the Dulcey family. Ten days at Los Nacederos in El Tambo, Cauca. We planted ten trees and dedicated them. We sat at a cupping table with the whole family and worked through the year's lots together.

Three years ago the Dulcey brothers put these Gesha trees in the ground themselves. This is the first harvest off that planting.

Gesha is an Ethiopian seed the world met through Panama. Low yield, fragile, needs altitude. Most farms won't plant it because the math doesn't work unless you can grow it right.

Tasting notes: Dragon fruit, orange blossom honey, star fruit, rose. Purple wild berry on the dry fragrance, chocolate chips once it's wet. Figs and prunes at the break, brighter and sweeter. In the cup, Milky Way, blueberry, chocolate. Clean, with just enough funk underneath.

The family picked the Pacamara as their favorite of the year. This one was mine. I wrote one word next to it in my notes.

PRESSURE.

We couldn't agree, so we brought home both. 39 kilos of green in two checked bags. 192 bags of coffee exist between the two lots. There is no second shipment.

ABOUT THE X-VARIABLE SERIES

X is the variable.

In algebra X is what you solve for. The unknown. In this coffee X is every small decision that turned one seed into this exact cup.

240 hours instead of 200. Picked Tuesday instead of Friday. Dried on this bed, at this altitude, by these hands, in this family's care.

Change one and you get a different coffee. Not a worse one. A different one.

That is the producer working in concert with the Creator. In the lab. In the studio. God made a plant that answers back, and the farmer answers it.

The rarest of rare. The dopest of dope. The finest of fine. The cleanest of clean.

We're starting this series after ten days with our Afro Colombian partners in Popayán and El Tambo. It will be a limited run with them and with other producers we work alongside.

The color on this label is what the variable produced this time. Different lot, different color, same X.

This is what excites us most about life. The variable.

God don't make no junk, and the coffee don't need no cream.


Who the Dulceys are.

They came up as farmers, not as investors who opened a cafe. They sell their own roasted coffee out of a shop in their own neighborhood in Popayán. Not to tourists. To their neighbors, at specialty prices, in a country where most growers still sell parchment to intermediaries for whatever the going rate is that week.

They used last harvest to pull investment into the farm and clear their debt. Having done that, they decided to grow less coffee and make it better. That decision is why this lot exists.

On August 10th a 7.4 earthquake hit Colombia. Days later Cali suspended the 30th Petronio Álvarez, the biggest Black cultural festival in the country. Over 60 artists we're in community with lost their homes. This coffee comes from the same department those artists come from.
